1. Ginger-Carrot Cream Soup
This soup is quite easy to prepare, even if you don’t know your way around in the kitchen. Thanks to the parsley and onions, this soup is a great immune booster that will keep you safe from colds and the flu.
Ingredients
- 5-6 carrots
- A thumb-sized piece of ginger
- 1 diced onion
- A tablespoon of olive oil or butter
- A bit of chopped parsley
- 1 tablespoon of ACV
- A sprinkle of salt and pepper
Preparation
Peel and chop the carrots and ginger or grate them if you like. Now, take a large pot and fry the onions on butter or olive oil. When soft, add the ginger-carrot mix and stir well. Add the ACV, salt, and pepper in the end, then cover everything with water. Cook the soup for about half an hour, adding some chopped parsley 2 minutes before the end. If it comes out too thick, add a bit more water to the soup.

2. Ginger-Coconut Milk Soup
Ingredients
- 1 tablespoon coconut oil
- Peeled ginger (about a cup)
- A bit of grated lime zest
- A bit of chili pepper
- 3-4 cloves garlic (minced)
- ½ a can of coconut milk
- Salt, pepper, and other spices to taste
Preparation
First, you’ll need to warm up the coconut oil in a pan over medium heat. Once warm, add the chili peppers and ginger. Stir everything nicely for a minute or two before adding the garlic cloves. Add the coconut milk a minute later and stir until it boils. Now, pour 4 cups of water into the pan and bring everything to a boil. In the end, add the salt and pepper as well as any other dry spice you want.
Pour yourself a bowl of this delicious soup, add some coriander for decoration and enjoy.
3. Chicken Ginger Soup
Ingredients
- 1 onion
- 5-6 slices of peeled ginger
- 2 carrots
- 4-pound chicken
- 2 tablespoons soy sauce
- ½ a cup of pasta
- Chopped coriander leaves
- A bit of lemon zest
- Salt and pepper to taste
Preparation
Cook the chicken in a large pot with the carrots, ginger, and onion (use it whole) and about 2 quarts of water. Set the heat to medium and cook the chicken until it’s tender. Leave the chicken to cool down afterward, then shred the meat as thinly as you can. Don’t throw the water out!
Next, mix the carrots, ginger, and onion in a blender, then add a cup or two of water and the soy sauce. Blend this nicely, then add the meat in it. Now, return the whole mix in the pot with water and let it boil again. Add the pasta and cook for 5-6 minutes more, then season the soup and decorate with lemon zest and chopped cilantro.
