Recipe for Zucchini Fritters
- 1 zucchini, grated and peeled
- 1 garlic clove, minced and peeled
- ¼ cup of basil
- ¼ cup of oregano
- 1 tbsp. of lemon zest
- 2 eggs
- ¼ tbsp. of onion powder
- ¼ cup of gluten-free flour
- Coconut oil
- Salt and pepper
Add the grated zucchini in a colander. Place the colander under the sink and add ½ tbsp. of salt to the zucchini in it. Leave it for 10 minutes and then place the zucchini on a clean kitchen towel to remove the additional moisture. After, place the zucchini in a bowl and add the garlic, basil, oregano, eggs, lemon zest, salt and pepper, and onion to the bowl. Mix the ingredients and gradually add flour. Constantly steer so that there will be no lumps in the mixture.
